What Thermostat for a carb setup 160 or 180

Just wondering what is better to use on a carb setup a 160 or 180. Is there any pro's or con's between the two. The car has a 195 and runs about 200 to 205 on day like today with normal driving. When its ran hard it raises to 210 which is a little hotter than i like it to run. What do you carb guys suggest?

As cheap and easy as the t stat is, go ahead and try a 180. If that works to cool a bit better, go to a 160 and see what happens.
