I know under normal circumstances you would want the car down on all four wheels to weld in subframe connectors. But in my case, the car is on a rotisserie and has no stress loaded on it other than gravity. Can I weld the sub frame connectors on?

I've heard that you want the normal stress on the body while welding them on, because once the load has been applied, things like doors or glass may not line back up.

you need the car loaded as in all weight plus driver and what not before having them welded on. The chassis will flex more then you think. 5.0 mag did a nice atricle on it with pictures.

The article says nothing about the car should be under a load.

Normally it is suggested that you eld on your subfram connectors on a drive-on lift or while the car is sitting on all 4 wheels to eliminate some of the twisting or deformation that a frame lift may cause. If you are stripped down as far that you are on a rotissery, I see no reason why not to go ahead and weld them on!
When you start putting everything back together make sure the suspension is "squared" up (measure across diagonals) to be sure you are running straight and true.
