I've never had a car do this and it seems weird that it keeps happening but everything seems to be ok.

I've been having some issues with my temp gauge possibly giving me false readings. I use to think it was my thermostat sticking but have replaced it since then. What I get is, my temp gauge will sometimes rise til it reaches 210 or more then falls back to where it should be 180-190(from what I've been told) it did it before I replaced the thermostat and with the new thermostat it still does it.

Then last week when it was hot as hell I decided to go for a ride, started the car up, starts fine, had to go inside for a second to help my wife with something, the car idled for about 5-10 mins. Came back out and got in and looked down at my temp gauge and it was still reading 0. I thought, what the hell now? So I flicked it with my finger then it jumped right up to 180ish.
Then I started wondering if my temp gauge is messed up, then just yesterday I went to McDonalds and as I sat in the drive-thru I noticed my temp gauge was rising very slowly, before I got out of the drive-thru it was reading 230. So I pulled over and parked it and ate my lunch, the gauge was still reading 230ish with the car off.
I sat for about 30 minutes, when I started up and left it was still reading 230 then as I got going it fell back to where it should be, then after turning the car off again when I got where I was going the temp gauge slowly fell.

This gauge has done this a few times when going through a drive thru or sitting stil in traffic for some time but it always falls back to where it should be and no problems.
Could I have faulty gauges or is there something else I should be worried about? I've checked the oil and no coolant is in there and there isn't an excess of fluid coming from the exhaust...could I possibly have a bad water pump? Just throwing some things out there since I'm baffled on this on.

Any suggestions or ideas I can try or look for?

Some more info, is needed. Stock gauge? Stock 5.0 (assuming yes, from avitar)?

Mine did something similar, a few years ago and it turned out to be the fan clutch.

Oh, never look at the gauges and think they are right, with the key off.

Forgot to say they are Sunpro gauges.

my stock gauge was doing that. tuned out to be the front cover gasket hjad a hole in it, my best guess was tha it was getting air bubbles in it and would cause the thermostat to shut or open, maybe run a pressure test?

mechanical guage or electric. and i second the fan clutch. worth replacing on an older car anyway. its amazing how much a fan actually does. i can get afco guages for 20 bucks each. my car was reading all kinds of wrong and i ended up replacing oil pres and temp with them to find out the car was fine. all were mechanical guages i put in.
