What's the best stuff out there to dye interior parts? I have all the blue interior pieces but Id like to have gray. I can find some locally but for the pieces I cant, what is the best to use?
How well does it go down and how well does it hold up?

SEM brand is best. Scuff, use their prep cleaner, spray color.

The SEM stuff is a great product but I believe the fabric dyes are only designed as a refresher for the same color family. Blue to grey may not work.
SEM is really the go to company in interior dye. Like Walter said, it needs to be prepped well to adhere, all the armorall has to be removed. I cant tell you if the light over dark blue will work or not, but grey to black works great.

Ill be looking for new door panels which have to be for manual windows anyways so I wont be dying any fabric itself. Just the hard plastic. Im going to buy a can and try it and see how it does.

I've used their interior paints countless times for personal projects and for a shop I used to work at. The best if I do say so. Smyth paint centers and KOI paint centers carry it, I THINK Sherwin Williams stores that carry automotive paints carry it as well.

I did all the plastics in my 86 with sem interior paint and dye even the door panels arm rests they were prepped really good and used their vinyl prep on them and they turned out great never had an issue with them, only things that were factory black in the car was headliner, sill plates, seatbelts
1992 lx 5.0 5 speed stock and slow but looks good!
Im going to look and see what all gray I have today and go from there. I know I still need a dash and door panels. Hopefully the gray will go over the blue ok.

SEM products used here. As is with anything like this prep is the key. Very clean parts are a must for good results. This is porno red to titanium, can't imagine it'd be much worse with blue. Came out better than pictures show. Used two separate products here, one for hard plastics and one for vinyl.
