Well I guess black is still where its at as that seems to be all I have done lately. In tuscan matte black we have some audi and some nissan titan wheels. In satin black we have some old mustang 10 holes and a bunch of misc pontiac parts. Finally something not black an edelbrock intake in chrome/acrylic clear.

How long does that powder coating last under normal circumstances?

What do you consider "normal circumstances"?

It is more durable than most paint. Valve covers, intakes, etc you probably won't have to re-coat, ever. Sub frame connectors, etc which get hit by road debris may need a re-application in a few years. My rear sway bar is powder coated, the coating around the sharp edges have worn thin and the bar has started to rust. The rest of the bar could use a wash and wax and it would look brand new; 5 years, 100k miles on it.

It would be possible if my oven was big enough and you cut the roof off your car and then could install the entire roll cage at once. Small bolt together cages are doable or swing out door bars. Problem with cages is I can't coat it then weld it up it need completely welded then coated.
